Prawns (shrimp) soup – Indian style recipe

Things you need

Cleaned/de-veined Shrimp …400 gm
Cardamom pods … 3-4
Garlic pods … 3-4
Ginger … Small piece
Spring Onions … 3-4 stalks
Sesame oil … 2 tbsp
Coconut milk … 500 ml
Lime juice … Half lime
Red paprika (bell pepper) … 1
Turmeric, Fresh Coriander, Salt, Chili powder … as per taste

 

Here’s how:

1) Toss the shrimp in a small bowl with 1/2 teaspoon turmeric and lime juice and let it rest for 15 minutes

2) Take ginger, garlic, cardamom, and mash it in a mortar and pestle

3) Cut spring onions, paprika length wise

4) Heat oil in a heavy bottomed pan on medium heat until shimmering. Add onion, paprika, and the mashed ginger, garlic and cardamom paste and stir until fragrant, about 3-4 minutes. Add the marinated shrimp and allow to cook just until opaque, about 5 minutes. Add the coconut milk and bring to a gentle boil, about 2-4 minutes.

5) Add salt, chili powder and chopped coriander per taste
