Aubergine (eggplant) and yogurt salad (raita)

Aubergine (eggplant) and yogurt salad (raita) recipe

Prep time: 15 minutes
Cook time: 15 min

Things you need (2 person):
1 large aubergine
1 tsp chilli powder
1 tsp turmeric powder
1 tsp salt
1 tsp whole cumin
Half tsp black salt
1 cup yogurt

Here’s how:

  1. Thinly slice the aubergine and soak the slices in warm salted water for 10 mins.

2. Spread the aubergine slices thinly over a baking paper and grill them in the oven for 10 mins, on 200 deg. After 5 mins please turn them and switch sides.

3. Take the cumin and roast in a pan for a few minutes. Once done, crush it in a Mortar and pestle along with some chili powder, turmeric and a tiny hint of black salt.

4. Mix this spice in the yogurt, and the grilled aubergines in… you have a healthy salad ready to eat along with pita or chips.
